Weightlifting is more geared toward developing strength, speed, and power, and some of the major lifts actually work to alter you hormonally and neurologically. Gymnastics is primarily aimed at body control. It uses a lot of calisthenic movements and really helps to develop upper body strength.
I'll take a shot at it, not sure if it's exactly what you're looking for =)
Gymnastics rely on the body’s own weight as the sole source of resistance.

Gymnastics is learning to control your body weight.
Weightlifting is learning to control external weight.
